P. J. Crop!



I love Friday nights at Scrapp'n Savvy because I enjoy cropping with such such amazing women. You all inspire and encourage me and I thank you! I was called to repentance last night. I was posting the make-n-take and the dinner recipe and with move into the new location that has somehow slipped to the wayside. So by request I am going to strive harder to make sure this happens.

This month we have been doing soup and salad for our P.J. Crop feast. Last night we had Yummy black bean soup and corn casserole.

Corn Casserole

Melt 1/2 stick margarine in casserole dish -- Combine following in bowl:

1 (16 oz) can whole kernel corn (do not drain)
1 (16 oz) can creamed style corn
2 eggs
1 sm can green chilis (Optional)
1 box Jiffy Corn Muffin Mix
1 cup shredded cheddar cheese
Pour into casserole and bake at 350 until done. (approx 45 minutes)

Black Bean Soup, modified from a Weight Watchers recipe

1 spray(s) cooking spray
1 - 2 bell peppers(or frozen peppers ), finely chopped
1 cup celery, finely chopped
4 garlic clove(s), minced
45 oz canned black beans, undrained, divided (three 15 oz cans)
1 package spice mix
1/2 cup water
14 1/2 oz fat-free chicken broth, or vegetable broth
10 oz canned tomatoes with green chilis, such as Rotel Tomatoes
16 oz canned diced or pureed tomatoes
11 oz canned yellow corn, drained

Instructions
Coat bottom of a large stockpot with cooking spray or one to two teaspoons of oil. Add bell peppers, celery, and garlic and cook, stirring frequently, until veggies are soft but not brown, about 5 minutes.

Place 1 - 2 of the cans of beans and broth in blender and puree until smooth; or smash with a spoon or potato masher, and add to stockpot.

Stir third can of beans (do not puree first), tomatoes and green chilies, tomatoes, and corn into stockpot. Bring to a boil, lower heat to medium. Combine spice package and water together, stir into pot and simmer for 20 to 25 minutes. Yields about 1 1/2 cups of soup per serving
